What up, My son started pre-school today and it was amazing to see his life about to change forever. He will be in school for the next 18 or 19 years. He’ll unfortunately also have a schedule that will keep him away from me during the day, most of the year. I actually missed his little face today and I don’t really know why. He just started. Oh well, I’d better get used to it and wish for the holidays to come quickly. Until then, I’ll be the “Stay At Home Dad” to my other little bro, Phoenix. He and I will have to cook these delicious and savory meals together. I brought him to the kitchen the other day as I made one of my famous meals. He watched and was calm throughout the entire process. That lets me know that he has what it takes, just like his bigger brother to be a great Chef/Professional man.

In honor of my boys, I’m making spaghetti with a meat sauce today. I don’t have a lot of fresh herbs or fresh or canned tomatoes today so I’m going to use tomato sauce from a jar instead of making it from scratch. It’s going to be semi fast and very easy. Besides, I ain’t got a lot of time because I got to drive 35 minutes one way to pick up my boy from his new pre-school. So get ready, set, cook….enjoy.

Spaghetti with a tomato and ground turkey meat sauce

For the meat sauce
1 jar of Spaghetti sauce (Classico, Prego, etc)
1 11oz. packet of lean ground turkey meat
1 tbsp of fresh or dried rosemary
1 tbsp of kosher salt
1 tsp of dried thyme
1 tsp of garlic powder
1 tsp of onion powder
1 tsp of dried sage
1/2 tsp of powdered cinnamon
1 tsp of fresh ground black pepper
3 garlic cloves
2 tbsp of extra virgin olive oil

For the pasta
1 lb box of dried spaghetti

Get to cooking:
Bring a large pot of water salted (1 tbsp) to a vigorous boil add pasta and stir immediately to keep pasta from sticking together. Stir occasionally and allow to cook for 8-10 minutes or until aldente. Drain in a collander and place in a bowl with a drizzle of olive oil and stir to keep from sticking together.

For meat sauce
In a large pot add the olive oil to the heated vessel over a medium to high flame. Add ground turkey and dried and powdered herbs and stir until meat begins to brown. Add garlic, salt and cinnamon. Once turkey is cooked all the way through add the tomato sauce and bring to a quick boil. Turn heat to a medium flame and allow sauce and turkey meat to simmer for another 5 minutes.

To finish:
Toss pasta into sauce pot and stir gently trying not to break up the pasta. Or you can ladle the sauce on top of the pasta in a large serving bowl.

I made some quick garlic bread by taking what I had in the bread box. a couple of hamburger buns were spread with softened butter, I sprinkled some garlic powder and less than a pinch of salt total on all four halves. I then sprinkled some shredded cheese over each (or better yet, you can grate some parmesan cheese over each) and place under the broiler and watch closely until a light golden brown. Serve hot.

That’s an easy meal made in just minutes…about 20 minutes. Something my boy will actually eat most of when he gets home today.
