Happy Easter peeps…My wife and son went to an Easter egg event/hunt today. She was asked to bring a potluck type of thing and of course she asked me to make it. So I thought the perfect item would be this tasty Tortellini salad with an herb vinaigrette. I made it on her birthday last year and everyone loved it. I even thought it was quite tasty and I don’t even like salads or cold foods that much. Anyway, It was a hit, so here’s the recipe I got from M.C., with an added twist of J.S….Hope yall like it.

Cheese Tortellini and Herb Vin Salad

1.5 Lbs of three cheese tortellini
3/4 cup of extra virgin olive oil
3 Tbsp freshly squeezed lemon juice
2 Tbsp balsamic Vinegar
3 oz. Fresh Basil Chiffonade
3 oz. Fresh Tarragon chopped
3 oz. Fresh parsley chopped
1 oz. finely minced red onion or shallots
5 diced roma tomatoes with seeds and insides removed
About 8-10 small buffalo mozzarella balls sliced in half

Cook the tortellini in a large pot of salted boiling water. Drain, toss with 2 tbsp of olive oil and allow to cool to room temperature in a large bowl.

MIx the remaining ingredients except for the mozzarella in a separate mixing bowl until incorporated. Add salt and pepper to taste. Mix the vinaigrette with the tortellini. Pour into a serving dish. Add mozzarella slices around perimeter of tortellini and a couple of basil leaves for garnish. You can also add grilled chicken breast to this dish for a full meal along with fresh arugula or baby spinach tossed in balsamic vinegar for a flavor crank.

That’s if you don’t have a lot of greedy drunk people around…just joking.
