Yo, I hooked up this dish pretty quickly. I haven’t had pork in a while cause da wifey only eats fish and sometimes chicken. Anyway I said fuck it and went out and bought me and the boys some po’ chops. Great idea! The boys ate them up. It really looked like a dessert which made them even tastier. The Flavor Crank was a spice mix I created with a little cumin, cinnamon, coriander, turmeric, paprika and few other thangs…Chef Johnnie’s spice rubs and marinades. Coming soon! Enjoy this quick and easy meal.

Pan Roasted Pork Chops w Mashed Potatoes and Carmelized Apples

Ingredients:

2 to 4 bone in chops about 3/4 to 1 inch thick

S&P to taste

3 tbs of canola or vegetable oil

To make:

Heat a oven proof pan until very hot and the oil begins to smoke a little. Preheat your oven first to 400 degrees. Season pork chops on both sides but make sure you have let them come to room temperature before you cook so let them sit on the counter for about 25 minutes. Once your pan is smokin’ hot carefully add the chops to the pan laying them away from your body so as not to splash any unwanted grease on your hands. That won’t feel too good…besides, you’ll end up losing your appetite if you get splashed. Let the chops sear on the first side for about two to three minutes. The chops should be golden and nice. Turn the chops over and place the pan into the oven. Allow to roast for about another 3 to4 minutes. The chops can have just a little pink in the center for the perfect tenderness. Remove chops from the oven and allow to rest for about five minutes. Cover loosely with aluminum foil to keep warm. That’s it! To make the apples cut two granny smith apples into thin slices after coring the apple and removing all seed. In a skillet or pan over a medium to medium high flame add about two tbs of butter and toss the apples in along with two tbs of brown sugar. Flip the apples in the pan to incorporate the butter and sugar. Add two Tbs of brandy and flambe to allow the alcohol to burn off. Add a little water (about 2 Tbs) if you need a little more sauce. Make sure everything is nice and hot. Done! Pour over top of mashed potatoes and chops. Enjoy!
