Yo, I had a craving for eggnog. Dat stuff is super expensive in the store so i figured if I was going to spend $8 to $10 on a bottle of eggnog, I might as well make it myself for cheaper. That way I would have eggs, cream, milk and other stuff left over from my investment of $10. the flavor crank in this one is the type of liquor you decide to use. I used a single malt scotch…it was a gift from the dad-in-law. Enjoy!
3 organic eggs separated (whites from yolks)
1 cup of heavy cream
1/2 cup of whole milk or 2%
1 tsp of freshly grated nutmeg (or from the can if necessary)
1 tsp of vanilla extract
3 oz of bourbon
1/3 cup of sugar
2 tbs of sugar for egg whites
In a medium bowl add the egg yolks and 1/3 cup of sugar and beat with a hand mixer on high until mixture becomes thicker (about 8 to 10 minutes). Add the cream, milk, nutmeg, vanilla and bourbon and continue to mix until nice and smooth. In another bowl beat the egg whites and the 2 tbs of sugar until soft peaks are formed. Once egg whites are done, stir into egg yolk mixture and refrigerate until cold. To serve, sprinkle more grated nutmeg over top of eggnog in individual glasses or place everything into a large punch bowl and do the same. If you are not into the raw egg thing, heat the cream and milk in a sauce pan until the temperature reaches 160 degrees. Add the milk mixture to the egg yolk mixture by using a tempering technique. Add the rest of the ingredients as per the recipe. This will serve about 5 people. You might want to have a little bourbon left over so don’t put too much into the eggnog :). Enjoy.
