Yo, today I made more pancakes for my fam…like I do at least 3 times a week, especially on weekends. I finally got a fool proof recipe that is tasty as F*&k. The pancakes come out fluffy and tasty every time…almost:) The flavor crank I used in them is a teaspoon of vanilla and some sugar. Quite tasty and very easy to make. I used to just eyeball the ingredients but have recently been measuring the ingredients out so that I can get the same cakes every time. It works! Enjoy! This recipe will make about 10 pancakes.


2.5 cups of AP flour

1.5 cups of milk (2% or whole)

1 oz of heavy cream

1 tsp of vanilla extract

1 tsp of salt

3 tbs of sugar

2 large eggs

1.5 tbs of baking powder

2 tbs of melted butter

To Make:

In a large bowl combine eggs and milk and whisk to combine. Add sugar and vanilla and whisk. Add flour (sifted is optional but good), baking powder, salt and whisk until just incorporated then add melted butter and continue to whisk for another 5 seconds until incorporated. Done. In a large nonstick frying pan or griddle over a medium high heat add a tsp of butter and a tsp of vegetable or canola oil and then wipe entire pan with a paper towel to distribute evenly (each time). Turn heat down to medium and using a ladle add the pancake batter (two to a ladle roughly). depending on how hot your pan is wait about thirty seconds and then check to see if the cakes are golden brown. Flip over carefully and allow the other side to become golden brown also. Repeat until batter is gone or save the rest in a container for the next day. I use melted butter on my pancakes just like at this place called Dupars in California. My favorite pancake diner. Add strawberries or sliced bananas for garnish or fruit of your choice. I use a homemade syrup for my pancakes but Log Cabin or Mrs. Butterworth’s works just a well…almost:) Enjoy!
