Once again I am with my two boys and need to hook up a cool dinner. I know I want pasta today but should I make a carbonara? Naaaahhh…I decided to hook up a dish that had everything I wanted in it but usually cannot eat when da wifey is around due to her very picky eating habits. So, today is once again for me and the boys. I had a whole package of bacon in the fridge and I usually don’t like peas but I had this taste for them for some reason. Onions are always good with bacon and cheese definitely helps out too. I threw in everything …that’s what a brutha had in the fridge today, so I just started grabbing s*&t. It all ended up being da BOMB! I had to write a recipe that I am positive others have already written but this is my version….Check it out! Oh, the flavor crank for this dish was the heavy cream. Enjoy!
1 small package of bacon (about 8 slices) or pancetta diced small
1 small red onion sliced thinly
1 cup of frozen peas
2 tbs of fresh grated parmesan cheese
1/2 pound or 1/2 package of spaghetti
1/2 cup of heavy cream
3/4 cup of pasta water (saved from boiled pasta)
S&P to taste
Put on a large pot of water and bring to a boil over a high flame and add 1 TBS of kosher salt. When the water comes to a boil add the spaghetti remembering to stir right after you place it in the pot. Allow to cook for about 8 minutes or until ardent. Strain pasta but make sure you save 3/4 cup of the hot pasta water for the pan. Then, in a large fry pan over a medium flame add the chopped bacon and allow to brown while stirring occasionally without allowing the bacon to stick (about three minutes). Add the onions and and a pinch of salt and pepper. Allow the onions to become translucent and then add the peas. Add the pasta water and stir or swirl the pan. When the peas in the pan have thawed, add the pasta directly to the pan and use a pair of tongs to stir and incorporate all of the ingredients. Add the heavy cream and additional salt and pepper to taste. Place the contents into a large serving bowl and grate the parmesan cheese over the top. Done! I had a nice big glass of sparkling water with this one. This meal with feed about two or three peeps. Enjoy because it will go fast!
