Yesterday I needed something for me and Da Wifey. We only had two pieces of chicken…so the boys had to eat something else. I decided to do a Teriyaki marinade for our two skinless chicken breasts. It was tasty and worked really well because I marinated it for a couple of hours. When I got back from my boy’s soccer practice I hooked it all up. The flavor crank was the fresh ginger and red pepper flakes that I used in the marinade. I sliced the ginger up in a decent size and also kept it in the pan when the breasts were seared. Now, my wife said it was okay…but what does she know :)? I thought it was quite tasty. It was definitely easy. Maybe I should’ve added some Mirin…but I ain’t gots none…However, I will the next time but will not stress about it. Anyways this marinade can be used for fish also. Check it out.
2 Tbs of Soy Sauce
2 Tbs of Rice wine vinegar
2 Tbs of Maple syrup
1 Tbs of Mirin (Optional)
2 Garlic cloves sliced
1/2 inch of Ginger sliced
1/2 teaspoon of Red pepper flakes
Combine all ingredients and mix with a fork or whisk. Pour over protein of you choice and allow to marinate from 1 hour to overnight. Done. With my chicken I had a nice crisp Sauvignon Blanc. Enjoy.
