Mandarine/Orange Glazed Salmon



The other day I had dinner with a friend. I don’t usually allow people to cook for me but I had to get an “in” with her when she offered to cook for me. I said, “Yes”. She made the most wonderful Orange Glazed Salmon dish I ever had. It was amazing. I told her I was stealing this recipe…but I would add my own twist of course. Here is the recipe with my own @Flavor Crank seasonings added.

 

Ingredients:

3 Salmon filets

1/3 cup of soy sauce

¾ cup of mandarine or clementine juice

(I squeezed the juice out of about 7 mandarins or clementines)

The peels of 4 mandarines or clementines sliced thinly

2 tablespoons of honey

2 teaspoons of Flavor Crank’s All Purpose seasoning

(save one teaspoon of Flavor Crank for seasoning at the end)

1 tablespoon of chopped mint for Garnish

1/3 cup of water

 

To Make:

Incorporate all ingredients and stir until well mixed. Place the Salmon in a plastic ziplock bag or in a shallow dish or bowl. Pour the marinade over the Salmon, cover with plastic and allow to marinate in the refrigerator for 1-2 hours turning once.

 

Then place the Salmon and the marinade into a pan and cover with a lid turning the heat on to a medium to high flame until the marinade comes to a light boil.

 

Remove the lid and turn the flame down to medium and allow to simmer for another 12 minutes, turning the Salmon once half way through. The marinade will turn into a sauce and begin to caramelize. After about 10 minutes, turn the Salmon once more and allow to cook for another two minutes.

 

Remove Salmon from pan and place on a serving dish and season with the remaining Flavor Crank all purpose seasoning. Add 1/3 cup of water to the pan and turn the flame on high to remove the caramelized bits in the pan to create the sauce. Swirl the pan to get the bits on the sides of the pan. Once the sauce has thickened a bit, pour over the Salmon and add the mint. Done.

 

I threw together some fresh skinny asparagus with a chopped Roma tomato and one sliced nectarine. To make: Add extra virgin olive oil to a large preheated pan. Add all ingredients along with a tablespoon of Flavor Crank’s All Purpose seasoning, stirring constantly until asparagus softens…about 6-8 minutes. I drizzled a little sesame oil over the asparagus for taste. Add S&P to taste . Enjoy!
