Okay, the other day I hooked up some vegan fried oyster mushrooms for a client of ours. I made over 40 pieces of fried chicken for the event but there was one vegan so I did her bidding. We had a large fryer for the chicken but her mushrooms were fried in a small pot with canola oil.
I used to be against making “special” orders like gluten free or vegetarian or vegan, but as a chef I learned everyone has to be catered to, no matter what. Keep the clients happy! I used my Lip Smackin’ Chicken for the Flavor Crank to bump this easy recipe up and give it lots of Flavor. The seasoning did the job really well. The fried mushrooms were a hit and looked just like chicken. The texture was the bomb and this dish was so easy to prepare and make. Check it owwwtttt!
Ingredients:
3/4 cup of oatmilk
2 tablespoons All purpose flour
1 tablespoon of flavor Crank’s Lip Smackin’ Chicken seasoning
1 pinch of Kosher salt (optional)
2 bunches of Fresh Oyster Mushrooms (Pulled apart to single or double stems)
2 cups of Canola or Grape seed oil
To Make:
Preheat the oil in a deep medium sized pot. In the meantime pull apart the oyster mushrooms since they come usually in large bunches. They could be the size of a chicken wing and allow you to take two bites each. Mix the AP flour together with the Flavor Crank and salt with a fork or whisk. Add the oatmilk and mix until smooth. The batter should be pretty loose but not as thick as pancake batter. Add more oatmilk if needed. Allow to sit for a couple of minutes.
Place a couple of mushrooms into the batter and allow to the batter to coat the mushrooms evenly. You can use a pair of tongs to keep your hands clean…or not.
Once the oil comes to a temperature of about 325 degrees use the tongs to submerge the batter coated oyster mushrooms and allow to fry for 2-3 minutes turning occasionally until all sides have a golden brown coating. Remove from the oil and place on paper towels. Done! Feel free to salt if you want but the Flavor crank seasoning will burst through and make these bad boys tasty. You’re going to want to introduce this to all of your friends, I guarantee it! Feel free to use a vegan ranch dressing, hot sauce or a nice Chimichurri for dipping.
